Polenta Fries

Looking for a quick and easy snack? Try these healthy polenta fries. Crisp and golden on the outside and super soft and tasty on the inside. Enjoy them with some tahini dip for a real taste sensation


  • 600ml vegetable broth
  • Tbsp nutritional yeast
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp ground oregano
  • Sea salt and pepper to taste
  • 150g polenta
  • Vegetable oil for brushing
  • Breadcrumbs:
  • 45g oats ground into flour
  • 2 Tbsp yeast
  • 1 tsp onion powder
  • ½ tsp ground oregano
  • ½ tsp smoked paprika
  • Salt and pepper to taste

‚ÄčBring the vegetable broth, yeast, onion, garlic, oregano, salt and pepper to a boil. Slowly add the polenta and whisk constantly to prevent lumps. Cook for about 5 minutes on low heat, then turn off the heat. Pour the polenta into a baking dish linked with parchment paper and cool in the fridge for about 1 hour.

For the breadcrumbs, add all ingredients to a small bowl and mix. Remove the cold polenta from the pan and cut it into equally sized slices. Preheat the oven 220°C. Brush the polenta slices with a little vegetable oil and coat with the breadcrumbs. Bake for 40-45 minutes or until golden brown. Turn halfway and spray with cooking spray. Enjoy.
